Aloo Bhindi – “A sauce recipe made from Potato (Aloo) and Lady’s Finger (Bhindi / Okra)”.

“What am I going to make for dinner tonight? If that’s a shaky question you’re with right now, I have a solution for you.”

If you had any leftover potatoes and some okra / woman’s finger in your fridge tonight we’re going to mix them with some Indian masala and make Aloo aur Bhindi ki sabji.

To give you a little introduction, aloo bhindi is a sauce dish where we make the sauce and add fries and a lady finger to it. The sauce for this dish is a mixture of onions, tomatoes, and cumin seeds. This dish is prepared in the Punjabi style, so I have used ghee to fry the vegetables and garam masala to give it the spicy flavor.

Prerequisite

First, the bhindi / okra and potatoes need to be fried separately. This ensures that the bhindi does not get soggy and, after coating the masalas, gives a beautiful flavor.

List of ingredients

Here is the ingredient list for this recipe. This list is for 3 people.

For Vegetables:

• Lady’s finger – 250 g

• Potatoes: 2 medium or 1 large

• Tomatoes – 2

• Cool green – 3

• Garlic – 4-5 slices

• Ginger: 1 slice

• Coriander leaves – ½ cup chopped

For Masalas

• Turmeric powder – ½ tablespoon

• Garam Masala – 1 tablespoon

• Coriander powder – 1 tablespoon

• Cold red powder – ½ tablespoon

• Mango powder – ¼ tablespoon (optional)

• Salt – 1 tablespoon

• Lemon juice – 2-3 tablespoons

Aloo bhindi – Preparation Steps

1. Dice 2 medium potatoes / 1 large potatoes and 250 g of lady finger into small pieces.

2. Heat about 2 tablespoons of butter or ghee in the skillet. As it heats up, fry the lady’s finger, until its sides turn brown. Repeat the same process for the potatoes. Once they are fried set them aside.

3. Dice 1 onion, 3 green chilies, 4-5 garlic sprigs, and 1 large slice of ginger.

4. Heat 2 tablespoons of ghee in a skillet. As it heats up, add 1 tablespoon of cumin seeds. As the seeds sizzle, add the 3 diced green chilies and the crushed ginger and garlic.

5. As the garlic begins to brown, add the onions. Add ¼ tablespoon of salt to help the onions lose water faster.

6. As the onions begin to brown, add ½ tablespoon turmeric powder, 1 tablespoon coriander powder, ½ tablespoon red chili powder, and 1 tablespoon garam masala powder. Stir well.

7. Add the diced tomatoes and sprinkle a little water and close the lid of the pan. Maintain a medium flame while doing so.

8. Once the tomatoes are cooked, the sauce thickens. Add water in small batches according to the required consistency.

9. When the oil starts to come off the sides of the pan and the sauce thickens, add the fried lady’s finger and potatoes and mix well. If necessary, add water and let the ingredients cook for about 10 min.

10. As the masalas set to boil, the sauce thickens. At this time, add ¼ tablespoon of mango powder.

11. Put out the flame. Chop some coriander leaves and decorate on top of this plate. Aloo bhindi recipe is ready to serve.
